Delicious and healthy Mediterranean Quesadillas filled with mozzarella, feta, fresh spinach, and red onion.
Ingredients
- Flour tortillas
- Mozzarella cheese
- Feta cheese
- Fresh spinach
- Red onion
- Olive oil
- Salt
- Pepper
Instructions
- Heat olive oil in a skillet over medium heat.
- Sauté chopped red onion until soft, then add fresh spinach and cook until wilted.
- Season with salt and pepper.
- On half of each tortilla, layer mozzarella and feta cheese, then add the spinach and onion mixture.
- Fold the tortilla over to create a half-moon shape.
- Cook in the skillet for 2-3 minutes on each side or until golden brown and cheese is melted.
- Cut into wedges and serve warm.
