Description

Delicious and healthy Mediterranean Quesadillas filled with mozzarella, feta, fresh spinach, and red onion.


Ingredients

  • Flour tortillas
  • Mozzarella cheese
  • Feta cheese
  • Fresh spinach
  • Red onion
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté chopped red onion until soft, then add fresh spinach and cook until wilted.
  3. Season with salt and pepper.
  4. On half of each tortilla, layer mozzarella and feta cheese, then add the spinach and onion mixture.
  5. Fold the tortilla over to create a half-moon shape.
  6. Cook in the skillet for 2-3 minutes on each side or until golden brown and cheese is melted.
  7. Cut into wedges and serve warm.
