- 2 cups cherry tomatoes, halved
- 1 cup cucumbers, diced
- 1/2 cup olives, pitted and sliced
- 8 oz pasta, cooked and cooled
- 1 lemon, juiced
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 2 tbsp red wine vinegar
- 3 oz feta cheese, crumbled
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- Salt to taste
- Pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine cherry tomatoes, cucumbers, and olives.
- In a separate bowl, whisk together olive oil, lemon juice, minced garlic, oregano, red wine vinegar, salt, and pepper to create the vinaigrette.
- Add the cooled pasta to the vegetable mixture and pour the vinaigrette over. Toss to combine.
- Garnish with crumbled feta and fresh basil before serving.
Notes
Allow the salad to chill for at least 30 minutes before serving for optimum flavor.
