Description

A refreshing and colorful dish that captures the flavors of the Mediterranean, perfect for picnics and light lunches.


Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1/2 cup olives, pitted and sliced
  • 8 oz pasta, cooked and cooled
  • 1 lemon, juiced
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 2 tbsp red wine vinegar
  • 3 oz feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine cherry tomatoes, cucumbers, and olives.
  3. In a separate bowl, whisk together olive oil, lemon juice, minced garlic, oregano, red wine vinegar, salt, and pepper to create the vinaigrette.
  4. Add the cooled pasta to the vegetable mixture and pour the vinaigrette over. Toss to combine.
  5. Garnish with crumbled feta and fresh basil before serving.

Notes

Allow the salad to chill for at least 30 minutes before serving for optimum flavor.
