- 1 cup Orzo pasta
- 1 cup Asparagus spears, chopped
- 1 cup Marinated artichoke hearts, chopped
- 1/2 cup Feta cheese, crumbled
- 1 cup Cherry tomatoes, halved
- 1/4 cup Fresh basil, chopped
- 2 tbsp Lemon juice
- 3 tbsp Olive oil
- Salt and pepper to taste
- 1/4 cup Pine nuts (optional)
- 1/2 cup Olives (optional)
- 1 cup Cucumber, diced (optional)
- 1 cup Grilled chicken, sliced (optional)
Instructions
- Cook the orzo pasta according to package instructions; drain and let cool.
- Combine the cooked orzo, chopped asparagus, artichoke hearts, crumbled feta, halved cherry tomatoes, and chopped fresh basil in a large bowl.
- Whisk together lemon juice, olive oil, salt, and pepper in a separate small bowl to create the dressing.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
- Customize your salad with optional ingredients like olives, cucumber, and grilled chicken.
- Before serving, sprinkle toasted pine nuts on top for added crunch.
