- 1 head Cauliflower
- 1 cup Cherry Tomatoes
- 1/2 medium Red Onion
- 1/4 cup Black Olives
- 1/4 cup Green Olives
- 1/4 cup Parsley
- 1/4 cup Olive Oil
- 2 tablespoons Red Wine Vinegar
- 1 tablespoon Dijon Mustard
- 1 clove Minced Garlic
- 1 teaspoon Oregano
- 1 teaspoon Basil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1/4 teaspoon Red Pepper Flakes (optional)
Instructions
- Start by prepping the cauliflower. Remove the leaves and the stem, and cut it into small florets.
- In a large pot, bring salted water to a boil. Add the cauliflower florets and blanch them for about 3-4 minutes until they’re tender yet still crisp.
- Drain the cauliflower and transfer it to a bowl of ice water to stop the cooking process. Allow it to cool for about five minutes, then drain it again.
- In a large mixing bowl, combine the cooled cauliflower, cherry tomatoes, red onion, black olives, green olives, and parsley.
- In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, basil, salt, black pepper, and red pepper flakes until well combined.
- Pour the dressing over the salad and toss everything gently until the vegetables are well coated.
- For the best flavor, let the salad marinate in the fridge for at least an hour before serving.
