- 12 oz fusilli pasta
- 1/2 cup basil pesto
- 8 oz burrata cheese
- 1 cup cherry tomatoes, halved
- 1/4 cup pine nuts
- 2 cups fresh arugula
- 1 lemon, juiced
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water.
- Combine the cooked pasta, basil pesto, burrata, and halved cherry tomatoes in a large bowl.
- Toss in the crunchy pine nuts and fresh arugula.
- Squeeze fresh lemon juice over the pasta and season with salt and pepper to taste.
- Mix everything gently until well combined.
