Description

A delightful one-pan meal combining tender chicken, fresh zucchini, and juicy cherry tomatoes, baked with flavorful spices and topped with melted cheese.


Ingredients

  • 2 boneless, skinless chicken breasts (cut into 1-inch bite-sized pieces)
  • 2 medium zucchinis (sliced into quarter-inch half-moons)
  • 1 cup cherry tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (freshly grated preferred)
  • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions

  1. Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish with olive oil or cooking spray.
  2. In a large mixing bowl, combine the chicken pieces, sliced zucchini, cherry tomatoes, red onion, and minced garlic. Drizzle with olive oil and add dried oregano, basil, smoked paprika, salt, pepper, and red pepper flakes if using. Toss until evenly coated.
  3. Spread the mixture evenly in the baking dish and sprinkle mozzarella and Parmesan cheese on top.
  4. Cover with aluminum foil and bake for 20 minutes. Then, carefully remove the foil and bake for an additional 10 to 15 minutes, until the cheese is golden brown and the chicken reaches an internal temperature of 165°F.
  5. Let rest for 5 minutes before serving and garnish with freshly chopped parsley.
