Delicious and healthy Mediterranean chicken skewers with fresh vegetables, marinated and grilled to perfection.
Ingredients

- 1 lb chicken breast, cubed
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cucumber, sliced
- 1 cup cherry tomatoes
- 1 red onion, cut into wedges
- 1/2 cup olives
- 1/2 cup feta cheese, crumbled
Instructions
- Combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper in a bowl. Add cubed chicken and marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto skewers, alternating with cucumber, cherry tomatoes, red onion, and olives.
- Grill the skewers for 10-12 minutes or until the chicken is cooked through.
- Serve warm, topped with crumbled feta cheese.
Notes
Marinate chicken for longer (up to 2 hours) for more flavor. Make sure to check the internal temperature of the chicken reaches 165°F.
