Description

Delicious and healthy Mediterranean chicken skewers with fresh vegetables, marinated and grilled to perfection.


Ingredients

  • 1 lb chicken breast, cubed
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes
  • 1 red onion, cut into wedges
  • 1/2 cup olives
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper in a bowl. Add cubed chicken and marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat.
  3. Thread the marinated chicken onto skewers, alternating with cucumber, cherry tomatoes, red onion, and olives.
  4. Grill the skewers for 10-12 minutes or until the chicken is cooked through.
  5. Serve warm, topped with crumbled feta cheese.

Notes

Marinate chicken for longer (up to 2 hours) for more flavor. Make sure to check the internal temperature of the chicken reaches 165°F.
