Description

Juicy and flavorful Mediterranean Chicken Meatballs that are healthy and easy to prepare.


Ingredients

  • 1 lb Ground chicken
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup Crumbled feta cheese
  • 1/4 cup Finely chopped red onion
  • 2 tablespoons Chopped fresh dill
  • 2 tablespoons Chopped fresh parsley
  • 1 Large egg, lightly beaten
  • 2 cloves Minced garlic
  • 1 teaspoon Dried oregano
  • Zest of 1 lemon
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 tablespoon Olive oil (for cooking)
  • 1 cup Plain Greek yogurt
  • 1/2 cup Grated cucumber, squeezed dry
  • 1 tablespoon Lemon juice
  • 1 tablespoon Chopped fresh dill
  • 1 clove Minced garlic
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the ground chicken, panko breadcrumbs, crumbled feta cheese, chopped red onion, dill, parsley, beaten egg, minced garlic, oregano, lemon zest, salt, and pepper.
  2. Use your hands to gently mix everything until just combined. Be careful not to overmix.
  3. Lightly oil your hands to prevent sticking. Roll the mixture into 1.5-inch meatballs, which should yield about 18-20 meatballs.
  4. Preheat your oven to 400°F (200°C). Arrange the meatballs on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until golden brown and cooked through (internal temperature of 165°F / 74°C).
  5. Alternatively, heat olive oil in a large skillet over medium-high heat. Cook meatballs for 8-10 minutes, turning occasionally until browned on all sides and cooked through.

Notes

Serve with tzatziki sauce, fresh salad, pasta, or pita bread.
