Juicy and flavorful Mediterranean Chicken Meatballs that are healthy and easy to prepare.

- 1 lb Ground chicken
- 1/2 cup Panko breadcrumbs
- 1/4 cup Crumbled feta cheese
- 1/4 cup Finely chopped red onion
- 2 tablespoons Chopped fresh dill
- 2 tablespoons Chopped fresh parsley
- 1 Large egg, lightly beaten
- 2 cloves Minced garlic
- 1 teaspoon Dried oregano
- Zest of 1 lemon
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1 tablespoon Olive oil (for cooking)
- 1 cup Plain Greek yogurt
- 1/2 cup Grated cucumber, squeezed dry
- 1 tablespoon Lemon juice
- 1 tablespoon Chopped fresh dill
- 1 clove Minced garlic
- Salt and pepper to taste
Instructions
- In a large bowl, combine the ground chicken, panko breadcrumbs, crumbled feta cheese, chopped red onion, dill, parsley, beaten egg, minced garlic, oregano, lemon zest, salt, and pepper.
- Use your hands to gently mix everything until just combined. Be careful not to overmix.
- Lightly oil your hands to prevent sticking. Roll the mixture into 1.5-inch meatballs, which should yield about 18-20 meatballs.
- Preheat your oven to 400°F (200°C). Arrange the meatballs on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until golden brown and cooked through (internal temperature of 165°F / 74°C).
- Alternatively, heat olive oil in a large skillet over medium-high heat. Cook meatballs for 8-10 minutes, turning occasionally until browned on all sides and cooked through.
Notes
Serve with tzatziki sauce, fresh salad, pasta, or pita bread.
