Ingredients

  • 4 white fish fillets (like cod or tilapia)
  • 2 cups cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, arrange the fish fillets in a single layer.
  3. In a separate bowl, combine cherry tomatoes, bell pepper, zucchini, red onion, olive oil, lemon juice, garlic, thyme, parsley, salt, and pepper. Toss to coat the vegetables well.
  4. Pour the vegetable mixture evenly over the fish in the baking dish.
  5. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Serve warm, garnished with additional herbs if desired.
