- 4 white fish fillets (like cod or tilapia)
- 2 cups cherry tomatoes, halved
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme
- 1 tablespoon fresh parsley
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, arrange the fish fillets in a single layer.
- In a separate bowl, combine cherry tomatoes, bell pepper, zucchini, red onion, olive oil, lemon juice, garlic, thyme, parsley, salt, and pepper. Toss to coat the vegetables well.
- Pour the vegetable mixture evenly over the fish in the baking dish.
- Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve warm, garnished with additional herbs if desired.
