- 2 cups of rice
- 4 cups of water
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 pound of chicken breast, diced
- 2 cups of mixed vegetables (carrots, peas, bell pepper)
- 2 teaspoons of soy sauce
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Black pepper to taste
Instructions
- Cook the Rice: In a medium pot, bring the water to a boil. Add the rice, olive oil, and salt. Stir once, cover, and reduce the heat to low. Cook for about 18 minutes or until the water is absorbed and the rice is tender. Remove from heat and let it sit for 5 minutes before fluffing with a fork.
- Prepare the Chicken: While the rice cooks, heat a large skillet over medium heat. Add the diced chicken to the skillet and season with garlic powder, onion powder, salt, and black pepper. Cook the chicken for about 5-7 minutes, or until the chicken is no longer pink in the center.
- Add the Vegetables: Stir the mixed vegetables into the skillet with the chicken. Cook for an additional 5 minutes, allowing the vegetables to soften.
- Combine: Once the vegetables are cooked, add the cooked rice to the skillet. Stir in the soy sauce and mix everything together until well combined.
- Serve: Taste and adjust seasoning if necessary. Serve hot and enjoy your simple dinner!
