Description

Delightful homemade candies with a creamy center, rich chocolate coating, and a crunch from pecans and coconut, perfect for holidays.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 tablespoon vanilla extract
  • 1 (14-ounce) can sweetened condensed milk
  • 4 cups powdered sugar
  • 14 ounces sweetened shredded coconut
  • 10-ounce jar maraschino cherries, drained and chopped
  • 3 cups pecans, chopped
  • 6 cups semi-sweet chocolate chips
  • 4 tablespoons shortening

Instructions

  1. Beat together the softened butter, vanilla extract, and sweetened condensed milk in a large mixing bowl until smooth and creamy.
  2. Add the powdered sugar to the bowl and mix well until everything is fully combined.
  3. Fold in the shredded coconut, chopped cherries, and chopped pecans until evenly distributed.
  4. Cover the mixture with plastic wrap and refrigerate for 1 to 2 hours to firm up.
  5. Line two baking sheets with parchment paper.
  6. Use a 1½ tablespoon scoop or melon baller to shape the mixture into balls and place them on the prepared baking sheets.
  7. Refrigerate the balls again until firm.
  8. In a microwave-safe bowl, melt the chocolate chips and shortening in 30-second intervals, stirring between each until smooth.
  9. Dip each chilled ball into the melted chocolate and let the excess drip off before placing back on the tray.
  10. Refrigerate the candies until the chocolate sets completely before serving or storing.

Notes

Store in an airtight container in the refrigerator for up to two weeks. Can be frozen for longer storage.
