- 2 tablespoons Olive oil
- 1 Medium onion, diced
- 3 cloves Garlic, minced
- 1 teaspoon Ground cumin
- 1 teaspoon Smoked paprika
- 1/2 teaspoon Cayenne pepper (optional)
- 1 can (15 oz) Chickpeas, drained and rinsed
- 1 can (14 oz) Diced tomatoes, with juices
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 cup Vegetable broth or water
- 2 cups Fresh spinach, roughly chopped
- 1/4 cup Fresh cilantro, chopped (for garnish)
- Lemon wedges (for serving), to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, cumin, smoked paprika, and cayenne pepper (if using). Cook for an additional 1 minute until fragrant.
- Add the chickpeas, diced tomatoes, salt, black pepper, and vegetable broth to the skillet. Stir well to combine.
- Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.
- Stir in the chopped spinach and cook for another 2–3 minutes, until the spinach has wilted.
- Taste and adjust seasonings if necessary.
- Serve hot, garnished with fresh cilantro and lemon wedges on the side.
Notes
Can be stored in the refrigerator for up to 3-4 days or frozen for 2-3 months.
