- 3–4 boneless, skinless chicken breasts (about 1.5 lbs, cut into bite-sized pieces)
- 2 tablespoons olive oil
- 3 cloves fresh garlic (minced)
- 9 oz cheese-filled tortellini (fresh preferred)
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 cups fresh spinach (packed)
- 2 teaspoons Italian seasoning
- Salt and pepper (to taste)
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Season chicken pieces with salt and pepper and sauté in the skillet for 5-7 minutes until golden brown and cooked through.
- Add minced garlic and sauté for about 1 minute.
- Boil salted water in a separate pot and cook tortellini according to package directions (about 3-4 minutes). Reserve some pasta water before draining.
- Lower skillet heat and add heavy cream and Italian seasoning, simmering for 3-4 minutes until thickened.
- Add drained tortellini, spinach, and Parmesan cheese to the skillet, tossing gently for 1-2 minutes until spinach wilts and cheese melts.
- If the sauce is too thick, add reserved pasta water gradually until desired consistency is reached.
Notes
This dish is also great for leftovers, which can be stored in the fridge for 3-4 days or frozen for up to 2 months.
