  • 1/3 cup dry white wine or chicken broth
  • 1 cup heavy or whipping cream
  • 1/3 cup sun-dried tomatoes
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon crushed red pepper flakes
  • 2 cups cooked or rotisserie chicken (shredded)
  • 1/3 cup freshly grated parmesan cheese (plus more for serving)
  • 1 small handful fresh basil (torn or chopped)
  • Salt and pepper (to taste)

Instructions

  1. Prepare the pasta: Start by adding the uncooked pasta to the pressure cooker.
  2. Create the base: In a separate pan, melt the butter over medium heat and sprinkle the flour while stirring.
  3. Add the flavor: Toss in the minced garlic and sauté for about 30 seconds until fragrant, then add the tomato paste.
  4. Mix in liquids: Pour in the white wine or chicken broth and scrape the bottom of the pan to deglaze it.
  5. Add cream: Stir in the heavy cream, sun-dried tomatoes, oregano, and crushed red pepper flakes, then season with salt and pepper.
  6. Combine everything: Add the shredded cooked chicken and stir to combine all ingredients evenly.
  7. Pressure cook: Pour the mixture over the uncooked pasta in the pressure cooker and cook for about 8-10 minutes.
  8. Release pressure: Once the cooking time is complete, carefully release the pressure and stir in the grated parmesan cheese and fresh basil.
  9. Serve: Garnish with additional parmesan cheese and fresh basil before serving.
