- 8 ounces uncooked pasta (like penne or rigatoni)
- 2 tablespoons butter
- 0.5 tablespoon flour
- 3–4 cloves garlic (minced)
- 1 tablespoon tomato paste
- 1/3 cup dry white wine or chicken broth
- 1 cup heavy or whipping cream
- 1/3 cup sun-dried tomatoes
- 0.5 teaspoon dried oregano
- 0.25 teaspoon crushed red pepper flakes
- 2 cups cooked or rotisserie chicken (shredded)
- 1/3 cup freshly grated parmesan cheese (plus more for serving)
- 1 small handful fresh basil (torn or chopped)
- Salt and pepper (to taste)
Instructions
- Prepare the pasta: Start by adding the uncooked pasta to the pressure cooker.
- Create the base: In a separate pan, melt the butter over medium heat and sprinkle the flour while stirring.
- Add the flavor: Toss in the minced garlic and sauté for about 30 seconds until fragrant, then add the tomato paste.
- Mix in liquids: Pour in the white wine or chicken broth and scrape the bottom of the pan to deglaze it.
- Add cream: Stir in the heavy cream, sun-dried tomatoes, oregano, and crushed red pepper flakes, then season with salt and pepper.
- Combine everything: Add the shredded cooked chicken and stir to combine all ingredients evenly.
- Pressure cook: Pour the mixture over the uncooked pasta in the pressure cooker and cook for about 8-10 minutes.
- Release pressure: Once the cooking time is complete, carefully release the pressure and stir in the grated parmesan cheese and fresh basil.
- Serve: Garnish with additional parmesan cheese and fresh basil before serving.
