Description

A refreshing salad made with ripe tomatoes marinated in a flavorful mixture of olive oil, red wine vinegar, and fresh herbs.


Ingredients

  • 3 extra-large tomatoes (about 2 pounds)
  • â…“ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons finely chopped red onion
  • 1 large clove garlic, finely minced or crushed
  • 1 tablespoon minced fresh parsley, plus additional for garnish
  • 1 tablespoon minced fresh basil, plus additional for garnish
  • 1 teaspoon salt
  • Freshly ground black pepper, to taste

Instructions

  1. Start by slicing the tomatoes into ½-inch thick slices and arranging them in a single layer in a large, shallow dish.
  2. In a jar with a tight-fitting lid, combine olive oil, red wine vinegar, chopped red onion, minced garlic, parsley, basil, salt, and pepper. Secure the lid and shake vigorously until mixed.
  3. Pour the marinade evenly over the sliced tomatoes and cover the dish, letting it marinate at room temperature for 2 to 3 hours or refrigerate for 12 to 24 hours for a stronger flavor.
  4. Before serving, bring chilled tomatoes to room temperature and transfer to serving dishes, spooning some juices over the top.
  5. Garnish with additional freshly chopped parsley and basil.

Notes

Use ripe tomatoes for the best flavor and don’t skip the marinade time to allow the flavors to develop.
