- 3 extra-large tomatoes (about 2 pounds)

- ¼ cup red wine vinegar
- 2 tablespoons finely chopped red onion
- 1 large clove garlic, finely minced or crushed
- 1 tablespoon minced fresh parsley, plus additional for garnish
- 1 tablespoon minced fresh basil, plus additional for garnish
- 1 teaspoon salt
- Freshly ground black pepper, to taste
Instructions
- Start by slicing the tomatoes into ½-inch thick slices and arranging them in a single layer in a large, shallow dish.
- In a jar with a tight-fitting lid, combine olive oil, red wine vinegar, chopped red onion, minced garlic, parsley, basil, salt, and pepper. Secure the lid and shake vigorously until mixed.
- Pour the marinade evenly over the sliced tomatoes and cover the dish, letting it marinate at room temperature for 2 to 3 hours or refrigerate for 12 to 24 hours for a stronger flavor.
- Before serving, bring chilled tomatoes to room temperature and transfer to serving dishes, spooning some juices over the top.
- Garnish with additional freshly chopped parsley and basil.
