Description

A delicious side dish featuring parsnips roasted with maple syrup and thyme for a perfect balance of sweetness and earthiness.


Ingredients

  • 1 pound parsnips, peeled and cut into uniform sticks
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons pure maple syrup or honey/agave as a substitute
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat oven to 400°F.
  2. Peel parsnips and cut them into uniform sticks for even roasting.
  3. In a mixing bowl, toss parsnip sticks with olive oil, maple syrup, thyme, salt, and pepper until thoroughly coated.
  4. Spread the coated parsnips on a baking sheet in a single, even layer.
  5. Roast for 25 to 30 minutes, turning once halfway through, until the parsnips are tender and golden brown.
  6. Serve warm, garnished with additional thyme if desired.
