Deliciously moist blondies infused with maple syrup and apples, topped with a sweet glaze.

- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup butter (softened)
- 1/4 cup sugar
- 1 cup dark brown sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 2 large apples (chopped finely)
- 2 Tbsp brown sugar
- 1 Tbsp butter
- 1/4 cup pure maple syrup
- 1/2 cup powdered sugar
- 1/4 tsp vanilla extract
- 1/8 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line an 11×7 pan with tin foil or spray with cooking spray.
- Melt 1 Tbsp of butter in a small saucepan over medium heat, add the chopped apples, brown sugar, and cinnamon. Cook for about 5-7 minutes until tender.
- In a large mixing bowl, beat the softened butter with sugar and dark brown sugar until well combined.
- Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- Whisk together the flour, baking powder, and salt in another bowl. Gradually add this to the wet mixture and mix until just combined. Fold in the cooked apple mixture.
- Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes until a toothpick inserted comes out clean.
- Cool completely in the pan.
- Whisk together the maple syrup, powdered sugar, vanilla extract, and ground cinnamon in a small bowl. Drizzle glaze over the cooled blondies.
Notes
Ensure butter is softened, not melted. Don’t overmix the batter after adding flour.
