Description

Deliciously moist blondies infused with maple syrup and apples, topped with a sweet glaze.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter (softened)
  • 1/4 cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 large apples (chopped finely)
  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 1/8 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 11×7 pan with tin foil or spray with cooking spray.
  2. Melt 1 Tbsp of butter in a small saucepan over medium heat, add the chopped apples, brown sugar, and cinnamon. Cook for about 5-7 minutes until tender.
  3. In a large mixing bowl, beat the softened butter with sugar and dark brown sugar until well combined.
  4. Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Whisk together the flour, baking powder, and salt in another bowl. Gradually add this to the wet mixture and mix until just combined. Fold in the cooked apple mixture.
  6. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes until a toothpick inserted comes out clean.
  7. Cool completely in the pan.
  8. Whisk together the maple syrup, powdered sugar, vanilla extract, and ground cinnamon in a small bowl. Drizzle glaze over the cooled blondies.

Notes

Ensure butter is softened, not melted. Don’t overmix the batter after adding flour.
