Description

A delightful side dish that combines the sweetness of roasted carrots and apples with a tangy maple Dijon glaze.


Ingredients

  • 4 medium carrots, peeled and sliced
  • 2 apples, cored and sliced
  • 3 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the maple syrup, Dijon mustard, olive oil, salt, and pepper in a large bowl.
  3. Add the sliced carrots and apples to the bowl, tossing them to coat evenly with the mixture.
  4. Spread the coated carrots and apples on a baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through.
  6. Remove from the oven and garnish with fresh thyme if desired. Serve warm.

Notes
