- 4 medium carrots, peeled and sliced
- 2 apples, cored and sliced
- 3 tablespoons maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the maple syrup, Dijon mustard, olive oil, salt, and pepper in a large bowl.
- Add the sliced carrots and apples to the bowl, tossing them to coat evenly with the mixture.
- Spread the coated carrots and apples on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through.
- Remove from the oven and garnish with fresh thyme if desired. Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for 3-5 days. Reheat in the oven for best texture.
