- 4 pieces boneless, skinless chicken breasts
- 1/4 cup Dijon mustard
- 1/4 cup maple syrup
- Salt and pepper to taste
- 2 large sweet potatoes
- 2 tablespoons olive oil
- Fresh herbs (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes into bite-sized pieces.
- Drizzle the sweet potato cubes with olive oil and season with salt and pepper. Toss until well coated.
- Spread the sweet potatoes on a baking sheet in a single layer. Roast for about 25-30 minutes, until tender and caramelized.
- Whisk together the Dijon mustard and maple syrup in a small bowl until well combined.
- Season the chicken breasts with salt and pepper on both sides.
- Heat a large skillet over medium-high heat. Add olive oil if desired.
- Add the chicken breasts to the skillet. Cook for about 6-7 minutes on each side until cooked through and golden.
- Pour the maple Dijon sauce over the chicken in the skillet during the last few minutes of cooking, allowing it to thicken slightly.
- Remove the sweet potatoes from the oven once they’re done.
- Divide the roasted sweet potatoes among the bowls and top with the maple Dijon chicken. Pour any remaining sauce over the top and garnish with fresh herbs if desired.
Notes
Avoid overcooking the chicken to prevent dryness. Cut sweet potatoes uniformly for even cooking.
