- 1–2 pieces of boneless and skinless chicken breast
- 1/4 cup pure maple syrup
- 2 tablespoons Dijon mustard
- 1 cup uncooked brown rice or wild rice
- 2 medium sweet potatoes, cubed
- 1 cup Brussels sprouts, halved
- 2 tablespoons olive oil
- Salt to taste
- Optional toppings: Chopped pecans or dried cranberries
- Optional twist: Cinnamon and rosemary for extra flavor
Instructions
- Grill or pan-sear the chicken breast, brushing with a glaze made from maple syrup and Dijon mustard. Cook for about 6-7 minutes per side until golden brown and cooked through.
- Prep the sweet potatoes and Brussels sprouts. Toss in a bowl with olive oil, salt, and optional spices. Roast in a 400°F (200°C) oven for 25–30 minutes until tender and caramelized.
- Prepare the brown or wild rice according to the package instructions.
- In bowls, add a scoop of cooked rice, slice the grilled chicken on top, and add roasted sweet potatoes and Brussels sprouts.
- Drizzle with any leftover maple mustard sauce and sprinkle with optional toppings if desired.
Notes
Store leftovers separately in airtight containers in the refrigerator. Chicken lasts 3-4 days; veggies and rice for up to a week.
