Description

A delicious and balanced meal featuring grilled chicken, sweet potatoes, and Brussels sprouts with a maple-Dijon glaze.


Ingredients

  • 12 pieces of boneless and skinless chicken breast
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 cup uncooked brown rice or wild rice
  • 2 medium sweet potatoes, cubed
  • 1 cup Brussels sprouts, halved
  • 2 tablespoons olive oil
  • Salt to taste
  • Optional toppings: Chopped pecans or dried cranberries
  • Optional twist: Cinnamon and rosemary for extra flavor

Instructions

  1. Grill or pan-sear the chicken breast, brushing with a glaze made from maple syrup and Dijon mustard. Cook for about 6-7 minutes per side until golden brown and cooked through.
  2. Prep the sweet potatoes and Brussels sprouts. Toss in a bowl with olive oil, salt, and optional spices. Roast in a 400°F (200°C) oven for 25–30 minutes until tender and caramelized.
  3. Prepare the brown or wild rice according to the package instructions.
  4. In bowls, add a scoop of cooked rice, slice the grilled chicken on top, and add roasted sweet potatoes and Brussels sprouts.
  5. Drizzle with any leftover maple mustard sauce and sprinkle with optional toppings if desired.

Notes

Store leftovers separately in airtight containers in the refrigerator. Chicken lasts 3-4 days; veggies and rice for up to a week.
