- 1 cup all-purpose flour
- 1/4 cup sugar
- 1/2 cup unsalted butter, softened
- 1 egg yolk
- 1/4 teaspoon salt
- 2 ripe mangoes, pureed
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C).
- Mix together the flour, sugar, and salt in a bowl.
- Add the softened butter and egg yolk to the mixture. Stir until a dough forms.
- Roll out the dough on a lightly floured surface and cut into circles.
- Press the circles into tartlet pans.
- Bake for 10-12 minutes or until golden brown.
- In a separate bowl, whip the heavy cream and gradually add powdered sugar and vanilla extract until you reach stiff peaks.
- Mix the mango puree with cornstarch in another bowl. Gently fold this mango mixture into the whipped cream.
- Fill the baked tartlets with the mango and cream mixture.
- Chill the filled tartlets in the refrigerator for at least 30 minutes before serving.
Notes
Ensure mangoes are ripe for best flavor and avoid overmixing the dough to keep it flaky.
