Description

Delicious chicken pillows wrapped in flaky puff pastry, filled with a creamy chicken and cheese mixture, topped with a rich Parmesan sauce.


Ingredients

  • 2 cups cooked, shredded or finely diced chicken breast
  • Puff pastry (thawed)
  • 1 block full-fat cream cheese, softened
  • Fresh chives or parsley, finely chopped
  • Salt
  • Black pepper
  • Onion powder
  • 4 tablespoons unsalted butter
  • 23 cloves garlic, minced
  • 4 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Nutmeg
  • Cayenne pepper

Instructions

  1. In a medium bowl, combine the cooked chicken, cream cheese, half of the Parmesan cheese, chives or parsley, salt, black pepper, and onion powder to create the filling.
  2. Lay out thawed puff pastry on a floured surface and roll it out into a 10-inch square.
  3. Cut pastry into nine equal squares and place a tablespoon of filling in the center of each square.
  4. Moisten edges of each pastry square with water, fold over to form a triangle, and press to seal.
  5. Transfer sealed pillows to a baking sheet lined with parchment paper and brush with egg wash.
  6. Bake in a preheated oven at 400°F (200°C) for 18-22 minutes until golden brown.
  7. While pillows are baking, melt butter in a saucepan, sauté garlic, then whisk in flour to create a roux.
  8. Gradually add milk, chicken broth, and heavy cream, whisking until thickened.
  9. Stir in remaining Parmesan cheese and season with salt, black pepper, nutmeg, and cayenne pepper.
  10. Serve the chicken pillows warm with the creamy sauce.

Notes

To prevent sogginess, reheat leftovers in the oven. This dish can also be filled with turkey or a vegetarian option can be made using mushrooms.
