- 2 1/2 cups sweetened shredded coconut
- 1 cup sweetened condensed milk
- 2 large egg whites
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the coconut, sweetened condensed milk, vanilla extract, and salt. Stir until the coconut is evenly coated.
- In a separate clean bowl, beat egg whites on medium-high speed until soft peaks form.
- Fold one-third of the egg whites into the coconut mixture, then add the remaining egg whites and gently fold until just combined.
- Drop mounds of the mixture onto the baking sheet, leaving an inch of space between each.
- Bake for 18-22 minutes until golden brown.
- Cool completely on a wire rack.
Notes
Store macarons in an airtight container at room temperature for a few days or freeze with parchment paper between layers.
