- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups elbow macaroni
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 2 cups sharp cheddar cheese, shredded
- 1/2 cup heavy cream
- Chopped green onions for garnish
- Optional: crumbled bacon for garnish
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked and drain excess grease.
- Add diced onion and sauté for 3-4 minutes until translucent.
- Stir in minced garlic and cook for an additional minute.
- Pour in beef broth and diced tomatoes, add Worcestershire sauce and dijon mustard, and mix well.
- Heat until boiling, then stir in elbow macaroni.
- Reduce heat and let simmer for about 8-10 minutes, or until macaroni is tender.
- Add salt, black pepper, and smoked paprika, stirring to incorporate flavors.
- Lower heat, stir in shredded cheddar cheese until melted and creamy.
- Pour in heavy cream, stir well and heat through for another couple of minutes.
- Serve hot in bowls, garnished with chopped green onions and optional crumbled bacon.
