- 1 cup Unsalted butter, softened
- 1 1/4 cups Granulated sugar
- 1 large Egg, room temperature
- 2 teaspoons Vanilla extract
- 2 1/2 cups All-purpose flour
- 1/2 teaspoon Baking soda
- 1/2 teaspoon Baking powder
- 1/4 teaspoon Salt
- 2 cups Lucky Charms marshmallows, divided (1 cup for mixing into dough, 1 cup for topping cookies)
Instructions
- Preheat your oven to 350°F (175°C).
- Line your baking sheets with parchment paper or a silicone baking mat.
- In a large bowl, cream together the softened butter and granulated sugar using a mixer until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
- Gradually add the dry flour mixture to the wet butter mixture and mix just until combined.
- Stir in 1 cup of the Lucky Charms marshmallows into the dough.
- Use a cookie scoop or spoon to drop tablespoon-sized portions of dough onto the prepared baking sheets, about 2 inches apart.
- Press a few of the remaining marshmallows into the tops of each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze cookies in a freezer-safe bag for up to 3 months.
