Description

Fun and colorful cookies featuring Lucky Charms marshmallows, perfect for parties or a sweet treat.


Ingredients

  • 1 cup Unsalted butter, softened
  • 1 1/4 cups Granulated sugar
  • 1 large Egg, room temperature
  • 2 teaspoons Vanilla extract
  • 2 1/2 cups All-purpose flour
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 2 cups Lucky Charms marshmallows, divided (1 cup for mixing into dough, 1 cup for topping cookies)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheets with parchment paper or a silicone baking mat.
  3. In a large bowl, cream together the softened butter and granulated sugar using a mixer until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. In another bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
  6. Gradually add the dry flour mixture to the wet butter mixture and mix just until combined.
  7. Stir in 1 cup of the Lucky Charms marshmallows into the dough.
  8. Use a cookie scoop or spoon to drop tablespoon-sized portions of dough onto the prepared baking sheets, about 2 inches apart.
  9. Press a few of the remaining marshmallows into the tops of each cookie.
  10. Bake for 10-12 minutes or until the edges are lightly golden.
  11. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze cookies in a freezer-safe bag for up to 3 months.
