- 3 tablespoons oil
- 1 lb ground beef
- 1 sweet onion, chopped
- 1 orange bell pepper, seeded and chopped
- 3 garlic cloves, chopped
- 14 oz can fire roasted diced tomatoes
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 1 small head green cabbage, cored and chopped
- 2 cups shredded cheddar/jack cheese
Instructions
- Heat the oil in a large pot over medium heat.
- Add the chopped onion and orange bell pepper and cook until softened, about 5-7 minutes.
- Stir in the chopped garlic and cook for an additional minute until fragrant.
- Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Stir in the fire-roasted diced tomatoes, smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper until well combined.
- Fold in the chopped cabbage, ensuring it’s mixed with the meat and seasoning mixture.
- Transfer the mixture to a baking dish and spread it evenly.
- Top with shredded cheese and bake at 350°F (175°C) for 30-35 minutes, until the cheese is melted and bubbly.
Notes
For variations, consider using different meats or adding more vegetables. Adjust seasonings to taste.
