Description

A delicious low-carb casserole that captures the flavors of traditional cabbage rolls without the carbs. Perfect for a hearty meal.


Ingredients

  • 3 tablespoons oil
  • 1 lb ground beef
  • 1 sweet onion, chopped
  • 1 orange bell pepper, seeded and chopped
  • 3 garlic cloves, chopped
  • 14 oz can fire roasted diced tomatoes
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 small head green cabbage, cored and chopped
  • 2 cups shredded cheddar/jack cheese

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the chopped onion and orange bell pepper and cook until softened, about 5-7 minutes.
  3. Stir in the chopped garlic and cook for an additional minute until fragrant.
  4. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
  5. Stir in the fire-roasted diced tomatoes, smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper until well combined.
  6. Fold in the chopped cabbage, ensuring it’s mixed with the meat and seasoning mixture.
  7. Transfer the mixture to a baking dish and spread it evenly.
  8. Top with shredded cheese and bake at 350°F (175°C) for 30-35 minutes, until the cheese is melted and bubbly.

Notes

For variations, consider using different meats or adding more vegetables. Adjust seasonings to taste.
