- 1 pound 80/20 ground beef
- 1 large egg
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh chopped parsley
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh ground black pepper
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced (for sauce)
- 1 can (28 ounces) crushed tomatoes
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat a large skillet over medium heat and add the olive oil.
- In a large bowl, combine ground beef, egg, mozzarella cheese, Parmesan cheese, parsley, minced garlic, salt, and pepper. Mix everything gently.
- Form the mixture into 1.5-inch meatballs and set them aside.
- Sear the meatballs in the skillet until browned on all sides, about 6 minutes total. Remove the meatballs from the skillet and set aside.
- In the same skillet, sauté the chopped onion and garlic until soft and golden.
- Add crushed tomatoes and dried oregano to the skillet, seasoning with salt and pepper to taste. Let it simmer for about 5 minutes.
- Return the meatballs to the skillet, cover, and let simmer gently for 20 minutes until cooked through.
- Serve hot with extra parsley and Parmesan on top, if desired.
Notes
Don’t overcrowd the skillet when searing the meatballs to ensure even browning.
