Description

Juicy and flavorful meatballs packed with protein, served in a savory tomato sauce.


Ingredients

  • 1 pound 80/20 ground beef
  • 1 large egg
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh chopped parsley
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced (for sauce)
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat a large skillet over medium heat and add the olive oil.
  2. In a large bowl, combine ground beef, egg, mozzarella cheese, Parmesan cheese, parsley, minced garlic, salt, and pepper. Mix everything gently.
  3. Form the mixture into 1.5-inch meatballs and set them aside.
  4. Sear the meatballs in the skillet until browned on all sides, about 6 minutes total. Remove the meatballs from the skillet and set aside.
  5. In the same skillet, sauté the chopped onion and garlic until soft and golden.
  6. Add crushed tomatoes and dried oregano to the skillet, seasoning with salt and pepper to taste. Let it simmer for about 5 minutes.
  7. Return the meatballs to the skillet, cover, and let simmer gently for 20 minutes until cooked through.
  8. Serve hot with extra parsley and Parmesan on top, if desired.

Notes

Don’t overcrowd the skillet when searing the meatballs to ensure even browning.
