Ingredients

Scale
  • 2 cups of fresh spinach
  • 1 cup of diced tomatoes
  • 1 cucumber, sliced
  • 1 bell pepper, chopped
  • 1 avocado, diced
  • 1 can (15 oz) of chickpeas, rinsed and drained
  • 1/4 cup of diced red onion
  • 1/4 cup of fresh lemon juice
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs (such as parsley or cilantro) for garnish

Instructions

  1. Combine the spinach, diced tomatoes, cucumber, bell pepper, avocado, chickpeas, and red onion in a large bowl.
  2. Whisk together the lemon juice, olive oil, salt, and pepper in a small bowl.
  3. Pour the dressing over the salad ingredients in the large bowl.
  4. Gently toss everything together until well combined.
  5. Garnish with fresh herbs if desired.
  6. Serve immediately or chill in the refrigerator for about 30 minutes to let the flavors meld.

Notes
