Description

A comforting dish that combines the flavors of shepherd’s pie with crispy tater tots, perfect for cozy nights at home.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 ½ cups beef broth
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 (32 oz) bag frozen tater tots
  • 1 ½ cups shredded sharp cheddar cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute more.
  3. Add ground beef, breaking it up with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
  4. Stir in tomato paste and sprinkle flour over the beef mixture. Cook for 1-2 minutes, stirring constantly.
  5. Gradually pour in beef broth while stirring. Add Worcestershire sauce, dried thyme, salt, and pepper. Bring to a simmer and cook until thickened, about 5 minutes.
  6. Stir in frozen mixed vegetables. Cook until the vegetables are heated through, about 3 minutes. Remove from heat.
  7. Spread the beef and vegetable mixture evenly in a 9×13-inch baking dish. Arrange frozen tater tots in a single layer on top.
  8. Sprinkle shredded cheddar cheese evenly over the tater tots.
  9. Bake uncovered for 30-35 minutes until the tater tots are crispy and the cheese is melted and bubbly.
  10. Remove from the oven, garnish with chopped parsley if desired, and serve warm.

Notes

This dish is great for make-ahead meals. Leftovers can be refrigerated for up to four days or frozen for up to three months.
