- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 lb ground beef
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 1 ½ cups beef broth
- 2 cups frozen mixed vegetables (peas, carrots, corn)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 (32 oz) bag frozen tater tots
- 1 ½ cups shredded sharp cheddar cheese
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute more.
- Add ground beef, breaking it up with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
- Stir in tomato paste and sprinkle flour over the beef mixture. Cook for 1-2 minutes, stirring constantly.
- Gradually pour in beef broth while stirring. Add Worcestershire sauce, dried thyme, salt, and pepper. Bring to a simmer and cook until thickened, about 5 minutes.
- Stir in frozen mixed vegetables. Cook until the vegetables are heated through, about 3 minutes. Remove from heat.
- Spread the beef and vegetable mixture evenly in a 9×13-inch baking dish. Arrange frozen tater tots in a single layer on top.
- Sprinkle shredded cheddar cheese evenly over the tater tots.
- Bake uncovered for 30-35 minutes until the tater tots are crispy and the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped parsley if desired, and serve warm.
Notes
This dish is great for make-ahead meals. Leftovers can be refrigerated for up to four days or frozen for up to three months.
