Description

A delicious Loaded Potato Taco Bowl combines roasted potatoes with seasoned beef and fresh taco toppings for a satisfying meal.


Ingredients

  • 4 medium Potatoes
  • 1 pound Ground beef (or any other taco meat)
  • 1 cup Cheddar cheese, shredded
  • 1 cup Pico de gallo
  • 1 cup Sweet corn (canned or frozen)
  • 1 cup Guacamole
  • 1/2 cup Taco sauce
  • 2 tablespoons Seasoning (taco seasoning or your choice of spices)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and dice the potatoes into bite-sized pieces. Toss them with olive oil, salt, and pepper. Spread on a baking sheet in a single layer and roast for about 25-30 minutes, stirring halfway through, until crispy and golden brown.
  3. Cook the ground beef in a skillet over medium heat until browned. If necessary, drain the fat. Add taco seasoning and a bit of water according to the packet instructions and simmer for a few minutes.
  4. Assemble the bowl by layering roasted potatoes, seasoned beef, shredded cheddar cheese, pico de gallo, sweet corn, guacamole, and drizzling with taco sauce.
  5. Serve and enjoy while warm!
