Description

A comforting dish combining hearty flavors of steak and creamy garlic sauce stuffed into baked russet potatoes.


Ingredients

  • 4 large russet potatoes, scrubbed clean and patted dry
  • 4 tablespoons olive oil
  • 1½ tablespoons sea salt (for potato skins)
  • 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
  • 2 teaspoons kosher salt
  • 2 tablespoons garlic, minced (about 8–10 cloves)
  • 6 tablespoons butter, softened
  • 2 tablespoons Cajun seasoning (low sodium preferred)
  • 4 tablespoons avocado oil, divided
  • 1½ cups heavy cream
  • â…” cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, minced
  • Juice of 2 lemon wedges
  • ½–1 teaspoon red pepper flakes
  • 1 teaspoon freshly cracked black pepper

Instructions

  1. Preheat the oven to 425°F (220°C). Rub each potato with olive oil and coat well with sea salt.
  2. Place the potatoes on a lined baking sheet and bake for about 50-60 minutes, until skins are crisp and potatoes are soft inside.
  3. While the potatoes bake, trim and cut the steak into bite-sized pieces. Coat the steak with avocado oil, kosher salt, and Cajun seasoning in a bowl.
  4. Heat a skillet over medium-high heat, add the steak bites, and sear for about 2 minutes without flipping. Flip and cook for another minute.
  5. Lower the heat, add butter and minced garlic to the skillet, and toss the steak in the garlic butter until well coated. Keep warm.
  6. In the same skillet, add remaining butter and garlic, whisk in heavy cream, and stir in red pepper flakes and parmesan cheese. Simmer until thickened slightly.
  7. Stir in minced parsley and lemon juice to brighten the sauce.
  8. Remove the potatoes from the oven, cut them open, and fluff the insides with a fork. Mix in butter if desired.
  9. Fill the potatoes with steak bites and spoon the creamy garlic sauce generously over them.
  10. Serve immediately and enjoy!

Notes

You can customize these potatoes with additional toppings like sour cream, cheese, or chives.
