Description
A comforting dish combining hearty flavors of steak and creamy garlic sauce stuffed into baked russet potatoes.

- 4 large russet potatoes, scrubbed clean and patted dry
- 4 tablespoons olive oil
- 1½ tablespoons sea salt (for potato skins)
- 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
- 2 teaspoons kosher salt
- 2 tablespoons garlic, minced (about 8–10 cloves)
- 6 tablespoons butter, softened
- 2 tablespoons Cajun seasoning (low sodium preferred)
- 4 tablespoons avocado oil, divided
- 1½ cups heavy cream
- â…” cup parmesan cheese, grated
- 2 tablespoons fresh parsley, minced
- Juice of 2 lemon wedges
- ½–1 teaspoon red pepper flakes
- 1 teaspoon freshly cracked black pepper
Instructions
- Preheat the oven to 425°F (220°C). Rub each potato with olive oil and coat well with sea salt.
- Place the potatoes on a lined baking sheet and bake for about 50-60 minutes, until skins are crisp and potatoes are soft inside.
- While the potatoes bake, trim and cut the steak into bite-sized pieces. Coat the steak with avocado oil, kosher salt, and Cajun seasoning in a bowl.
- Heat a skillet over medium-high heat, add the steak bites, and sear for about 2 minutes without flipping. Flip and cook for another minute.
- Lower the heat, add butter and minced garlic to the skillet, and toss the steak in the garlic butter until well coated. Keep warm.
- In the same skillet, add remaining butter and garlic, whisk in heavy cream, and stir in red pepper flakes and parmesan cheese. Simmer until thickened slightly.
- Stir in minced parsley and lemon juice to brighten the sauce.
- Remove the potatoes from the oven, cut them open, and fluff the insides with a fork. Mix in butter if desired.
- Fill the potatoes with steak bites and spoon the creamy garlic sauce generously over them.
- Serve immediately and enjoy!
