Description

Ingredients

  • 1 cup plain yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Zest of 1 lemon (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with some oil or butter.
  2. In a large mixing bowl, whisk together the yogurt, granulated sugar, and eggs. Mix until you have a smooth texture.
  3. Pour in the vegetable oil and add the vanilla extract. Stir well until everything is combined.
  4. In another bowl, mix the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients. Mix gently until just combined. Be careful not to overmix.
  5. If you love a hint of lemon, fold in the lemon zest at this stage for extra flavor.
  6. Pour the batter into the prepared cake pan. Use a spatula to smooth the top.
  7. Place the cake in the oven and bake for 30-35 minutes. It’s done when you insert a toothpick into the center, and it comes out clean.
  8. Once baked, let it cool in the pan for about 10 minutes. After that, transfer it to a wire rack to cool completely.
  9. If you like, dust the cooled cake with some powdered sugar before serving. Enjoy!
