Ingredients

  • 1/2 cup Slivered Almonds
  • 1 cup Powdered Sugar
  • 1 tbsp Butter or Oil

Instructions

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  2. Prepare the Baking Sheet: Grease a baking sheet with butter or oil to prevent sticking.
  3. Mix the Wet Ingredients: In a mixing bowl, combine the ricotta cheese, granulated sugar, vanilla extract, almond extract, and egg. Whisk them together until smooth and creamy.
  4. Combine Dry Ingredients: In another bowl, mix the all-purpose flour, baking powder, and salt.
  5. Add Dry to Wet: Gradually add the dry mixture to the wet mixture. Stir gently until just combined.
  6. Fold in Almonds: Add the slivered almonds into the batter.
  7. Shape the Pills: Using two spoons, scoop out portions of the batter and drop them onto the prepared baking sheet.
  8. Bake: Place the baking sheet in the preheated oven and bake for about 20-25 minutes.
  9. Cool Down: Once baked, remove them from the oven and let them cool on a wire rack.
  10. Dust with Powdered Sugar: Just before serving, dust the Ricotta Almond Pillows with powdered sugar.
