  3. Add the white chocolate: Once the cream mixture reaches a simmer, remove it from the heat. Add the chopped white chocolate to the hot cream and stir gently until it is smooth and fully melted.
  4. Incorporate lemon flavor: Stir in the lemon juice and lemon zest, mixing until everything is evenly combined.
  5. Cool and serve: Allow the mixture to cool slightly. Then, divide it evenly into serving glasses or ramekins.
  6. Refrigerate: Place the filled glasses in the refrigerator. Let them chill for at least 120 minutes, or until the posset is set.
