Delightful skewers of grilled halloumi, cherry tomatoes, onion, and zucchini marinated in lemon and thyme, perfect for summer barbecues.

- 1 pound halloumi cheese, cut into 1-inch cubes
- 1 pound cherry tomatoes
- 1 large red onion, cut into 1-inch chunks
- 1 large zucchini, cut into 1-inch chunks
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh thyme leaves, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers
Instructions
- In a large bowl, whisk together the olive oil, fresh lemon juice, chopped thyme leaves, dried oregano, salt, and black pepper. Add the halloumi cubes, cherry tomatoes, red onion chunks, and zucchini chunks. Gently toss to coat evenly and let marinate at room temperature for at least 20-30 minutes.
- Assemble the skewers by alternating halloumi, cherry tomatoes, red onion, and zucchini. Leave space between each piece for even cooking.
- Preheat your grill to medium-high (around 400-450°F or 200-230°C) and clean the grill grates.
- Grill the assembled skewers for 3-5 minutes on each side, turning regularly until the halloumi is golden brown and crispy, and vegetables are tender with grill marks.
- Remove skewers from the grill and serve hot, optionally drizzling with extra lemon juice and garnishing with fresh thyme.
Notes
Marinate for longer if possible for deeper flavors. Be careful not to overcook the halloumi to prevent it from becoming rubbery.
