Ingredients

  • ½ cup water (lukewarm, 110-115°F)
  • ¾ cup milk (or unsweetened coconut milk, lukewarm, 110-115°F)
  • ¾ cup granulated sugar
  • ½ cup unsalted butter, very soft or melted
  • 1 large egg, at room temperature
  • 1 teaspoon salt
  • 4½ cups all-purpose flour, plus more for dusting
  • 2 tablespoons instant yeast
  • 10 ounces lemon curd
  • 1 cup powdered sugar
  • ¼ teaspoon lemon flavoring (optional)
  • 34 tablespoons milk (or unsweetened coconut milk)

Instructions

  1. In a large mixing bowl, combine lukewarm water and milk. Add granulated sugar and stir. Sprinkle yeast over the top and let sit for 5-10 minutes until foamy.
  2. Add softened butter, room temperature egg, and salt to the yeast mixture. Gradually add flour, mixing until a shaggy dough forms. Turn onto a lightly floured surface.
  3. Knead the dough for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  4. Punch down the dough and roll it into a 12×18 inch rectangle. Spread lemon curd evenly over the surface, leaving a ½-inch border. Tightly roll up the dough from a long edge and pinch to seal.
  5. Cut the log into 12 equal rolls and place cut-side up in a greased 9×13 inch baking pan. Cover and let rise for 30-45 minutes until puffy.
  6. Preheat the oven to 375°F (190°C). Bake the rolls for 20-25 minutes until golden brown. Let cool in the pan for 10 minutes.
  7. Whisk together powdered sugar and lemon flavoring. Gradually add milk, one tablespoon at a time, until a smooth, pourable glaze forms. Drizzle generously over the warm rolls.
