Bright, chewy bars combining the classic Rice Krispy treat with a refreshing lemon twist. Quick and easy to make, perfect for parties or a simple dessert.

- 6 cups Rice Krispy cereal
- 1 (10 oz) bag mini marshmallows
- 3 Tbsp unsalted butter
- 2–3 Tbsp lemon zest
- 1 tsp vanilla extract
Instructions
- In a large saucepan, melt the butter over low heat.
- Add the mini marshmallows and stir until completely melted.
- Remove from heat and add the lemon zest and vanilla extract.
- Stir in the Rice Krispy cereal until well combined.
- Press the mixture into a greased pan and let cool.
- Optionally, drizzle with lemon glaze before serving. Cut into bars and enjoy!
Notes
Work while the marshmallows are warm for better cereal coating. Line the pan with parchment paper for easy lifting. Adjust pressure for firmer or softer bars. These treats are great with milk, iced tea, or fresh fruit.
