Instructions
- Cut the lemon sponge cake into layers.
- In a trifle dish, place a layer of sponge cake at the bottom.
- Spoon a layer of lemon curd over the cake.
- Add a layer of whipped cream followed by fresh raspberries.
- Repeat the layers until all ingredients are used, finishing with whipped cream and raspberries on top.
- Garnish with mint leaves if desired.
- Chill in the refrigerator for at least 120 minutes before serving.
