- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup granulated sugar (for the filling)
- 2 large eggs
- 1/2 cup fresh lemon juice
- Zest of 1 lemon
- 1 cup raspberries (fresh or frozen)
- 1/4 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
- Cream together the softened butter and 1/2 cup sugar until smooth.
- Add the flour and salt, and mix until just combined. Press the mixture evenly into the bottom of the prepared baking dish.
- Bake for 20 minutes or until lightly golden.
- Whisk together the 1 cup sugar, eggs, lemon juice, zest, and baking powder until well combined.
- Fold in the raspberries gently.
- Pour the filling over the baked crust and return to the oven.
- Bake for another 20-25 minutes, or until the filling is set.
- Let cool completely before slicing into bars. Serve and enjoy!
