Description

Delightful Lemon Raspberry Bars that perfectly balance tartness and sweetness with zesty lemon and juicy raspberries.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup granulated sugar (for the filling)
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 cup raspberries (fresh or frozen)
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. Cream together the softened butter and 1/2 cup sugar until smooth.
  3. Add the flour and salt, and mix until just combined. Press the mixture evenly into the bottom of the prepared baking dish.
  4. Bake for 20 minutes or until lightly golden.
  5. Whisk together the 1 cup sugar, eggs, lemon juice, zest, and baking powder until well combined.
  6. Fold in the raspberries gently.
  7. Pour the filling over the baked crust and return to the oven.
  8. Bake for another 20-25 minutes, or until the filling is set.
  9. Let cool completely before slicing into bars. Serve and enjoy!
