Ingredients

- 1 cup rolled oats
- 1/2 cup nut butter (such as almond or peanut butter)
- 1/4 cup honey or maple syrup
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons poppy seeds
- 1/4 cup protein powder (optional)
- 1/4 cup mini chocolate chips (optional)
Instructions
- Combine rolled oats, nut butter, honey or maple syrup, lemon juice, lemon zest, poppy seeds, and protein powder in a mixing bowl.
- Mix until well combined.
- Fold in chocolate chips if desired.
- Scoop out the mixture and roll it into small balls.
- Place the bites on a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge for up to a week.
Notes
These energy bites can be frozen for up to three months. Use fresh lemon juice and zest for the best flavor.
