Delicious and healthy Lemon Poppy Seed Energy Bites that are perfect for a quick pick-me-up.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup nut butter (such as almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons poppy seeds
  • 1/4 cup protein powder (optional)
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. Combine rolled oats, nut butter, honey or maple syrup, lemon juice, lemon zest, poppy seeds, and protein powder in a mixing bowl.
  2. Mix until well combined.
  3. Fold in chocolate chips if desired.
  4. Scoop out the mixture and roll it into small balls.
  5. Place the bites on a parchment-lined baking sheet.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the fridge for up to a week.
