Ingredients

- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 can garbanzo beans, drained and rinsed
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a saucepan, bring water or vegetable broth to a boil.
- Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and all liquid is absorbed.
- In a large bowl, combine the cooked quinoa, garbanzo beans, lemon juice, lemon zest, olive oil, and garlic.
- Mix in the fresh parsley and season with salt and pepper to taste.
- Serve warm or at room temperature, and enjoy!
