Description

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 can garbanzo beans, drained and rinsed
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring water or vegetable broth to a boil.
  3. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and all liquid is absorbed.
  4. In a large bowl, combine the cooked quinoa, garbanzo beans, lemon juice, lemon zest, olive oil, and garlic.
  5. Mix in the fresh parsley and season with salt and pepper to taste.
  6. Serve warm or at room temperature, and enjoy!
