Description

A delicious and easy-to-prepare one-pan meal featuring marinated chicken, roasted potatoes, and fresh green beans.


Ingredients

  • 4 pieces Bone-in, skin-on chicken
  • 1/4 cup Fresh lemon juice
  • 4 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 3 cups Diced Yukon gold or red potatoes
  • 2 cups Fresh green beans

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine lemon juice, minced garlic, olive oil, salt, and pepper.
  3. Place chicken pieces in a bowl or ziplock bag and pour marinade over them. Coat well and let marinate for at least 30 minutes.
  4. Wash and dice the potatoes. Wash and trim green beans.
  5. On a baking sheet, spread diced potatoes, drizzle with olive oil, sprinkle with salt and pepper, and toss to coat. Arrange marinated chicken skin-side up on top of the potatoes.
  6. Scatter fresh green beans around the chicken and potatoes. Drizzle with more olive oil if desired.
  7. Bake in the preheated oven for 35-45 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and potatoes are tender.
  8. Let the dish rest for a few minutes before serving.

Notes

For a richer taste, you can substitute melted butter for olive oil. Ensure chicken is properly marinated for best flavor.
