A delicious and easy-to-prepare one-pan meal featuring marinated chicken, roasted potatoes, and fresh green beans.

- 4 pieces Bone-in, skin-on chicken
- 1/4 cup Fresh lemon juice
- 4 cloves Garlic, minced
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 3 cups Diced Yukon gold or red potatoes
- 2 cups Fresh green beans
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine lemon juice, minced garlic, olive oil, salt, and pepper.
- Place chicken pieces in a bowl or ziplock bag and pour marinade over them. Coat well and let marinate for at least 30 minutes.
- Wash and dice the potatoes. Wash and trim green beans.
- On a baking sheet, spread diced potatoes, drizzle with olive oil, sprinkle with salt and pepper, and toss to coat. Arrange marinated chicken skin-side up on top of the potatoes.
- Scatter fresh green beans around the chicken and potatoes. Drizzle with more olive oil if desired.
- Bake in the preheated oven for 35-45 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and potatoes are tender.
- Let the dish rest for a few minutes before serving.
Notes
For a richer taste, you can substitute melted butter for olive oil. Ensure chicken is properly marinated for best flavor.
