Description

Ingredients

  • 1 large box lemon Jell-O (6 oz)
  • 2 cups boiling water
  • 1 cup cold water
  • 1 package cook & serve lemon pie filling mix
  • 1 tub Cool Whip (8 oz), thawed
  • Optional whipped cream for garnish
  • Optional fresh lemon slices or zest for garnish

Instructions

  1. Pour the boiling water over the lemon Jell-O in a large bowl and whisk until fully dissolved.
  2. Stir in the cold water and refrigerate for 30 to 40 minutes until slightly thickened.
  3. Cook the lemon pie filling according to package directions, then cool completely.
  4. Gently stir the cooled lemon pie filling into the thickened gelatin until smooth.
  5. Fold in the thawed Cool Whip until fully mixed.
  6. Spoon the mixture into a large bowl or individual dessert cups and smooth the top.
  7. Refrigerate for at least 1 hour or until fully set before serving.

Notes

Make sure both mixtures are completely cooled before combining to prevent a runny texture. Use gentle folding to maintain the airy consistency.
