- 1 large box lemon Jell-O (6 oz)
- 2 cups boiling water
- 1 cup cold water
- 1 package cook & serve lemon pie filling mix
- 1 tub Cool Whip (8 oz), thawed
- Optional whipped cream for garnish
- Optional fresh lemon slices or zest for garnish
Instructions
- Pour the boiling water over the lemon Jell-O in a large bowl and whisk until fully dissolved.
- Stir in the cold water and refrigerate for 30 to 40 minutes until slightly thickened.
- Cook the lemon pie filling according to package directions, then cool completely.
- Gently stir the cooled lemon pie filling into the thickened gelatin until smooth.
- Fold in the thawed Cool Whip until fully mixed.
- Spoon the mixture into a large bowl or individual dessert cups and smooth the top.
- Refrigerate for at least 1 hour or until fully set before serving.
Notes
Make sure both mixtures are completely cooled before combining to prevent a runny texture. Use gentle folding to maintain the airy consistency.
