Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper.
- Combine the all-purpose flour, powdered sugar, and softened butter until crumbly.
- Press this mixture firmly into the bottom of the prepared pan to create a crust.
- Bake the crust in the preheated oven for about 15 minutes, or until lightly golden.
- Whisk together the granulated sugar, eggs, fresh lemon juice, lemon zest, baking powder, and salt until smooth.
- Pour the lemon mixture over the baked crust and return it to the oven. Bake for an additional 20 minutes or until set.
- Remove the pan from the oven and let it cool to room temperature.
- Whip the heavy cream in a mixing bowl until stiff peaks form.
- Spread the whipped cream evenly over the cooled lemon filling.
- Chill in the refrigerator for at least 2 hours before cutting into squares and serving.
