Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper.
  2. Combine the all-purpose flour, powdered sugar, and softened butter until crumbly.
  3. Press this mixture firmly into the bottom of the prepared pan to create a crust.
  4. Bake the crust in the preheated oven for about 15 minutes, or until lightly golden.
  5. Whisk together the granulated sugar, eggs, fresh lemon juice, lemon zest, baking powder, and salt until smooth.
  6. Pour the lemon mixture over the baked crust and return it to the oven. Bake for an additional 20 minutes or until set.
  7. Remove the pan from the oven and let it cool to room temperature.
  8. Whip the heavy cream in a mixing bowl until stiff peaks form.
  9. Spread the whipped cream evenly over the cooled lemon filling.
  10. Chill in the refrigerator for at least 2 hours before cutting into squares and serving.
