- 1/4 Cup Chia Seeds
- 1 Cup Oat Milk
- Zest of 1 Lemon
- 2 Tablespoons Maple Syrup
- 1/4 Teaspoon Vanilla Extract
- 1/4 Teaspoon Sea Salt
- 1 Cup Raw Cashews (soaked for 1 hour in hot water and drained)
- 1/2 Cup Oat Milk (for lemon cream)
- 2 Tablespoons Maple Syrup (for lemon cream)
- 2 Tablespoons Lemon Juice
- 1/4 Teaspoon Turmeric (for color)
- 1/2 Teaspoon Lemon Extract
Instructions
- In a bowl, mix all the chia pudding layer ingredients: chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and sea salt. Whisk until evenly combined.
- Cover the bowl and place the chia pudding mixture in the fridge. Let it set for about 180 minutes or overnight.
- Prepare the lemon cream layer by blending soaked cashews, 1/2 cup oat milk, maple syrup, lemon juice, turmeric, and lemon extract until smooth.
- Once the chia pudding has set, evenly split it into 4 small jars.
- Pour the lemon cream pudding layer on top of the chia pudding layer in each jar.
- Place the jars back in the fridge to set for another 180 minutes before serving.
- Top with fresh fruit before serving, if desired.
Notes
For best results, ensure to soak cashews properly and blend until completely smooth for the cream layer.
