Ingredients

- 1/2 tbs olive oil
- 500g chicken
- 1/2 tsp paprika
- 1 tbs butter
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 cup orzo pasta (uncooked)
- 1 medium zucchini, grated
- 2 cups low sodium chicken stock
- Zest and juice of 1 small lemon
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup light cream
Instructions
- Heat olive oil and butter in a large pot over medium heat.
- Add diced onion and minced garlic, and sauté until softened.
- Add chicken, paprika, salt, and pepper, cooking until the chicken is browned.
- Stir in grated zucchini and cook for a couple of minutes.
- Add orzo pasta and chicken stock, bringing to a boil.
- Reduce heat and simmer until the orzo is cooked, about 10-12 minutes.
- Stir in lemon zest, juice, and dried thyme.
- Add light cream and mix well before serving.
Notes
Be careful not to overcook the orzo, as it can become mushy. Use fresh herbs for enhanced flavor.
