- 1 ½ pound chicken breast
- 2 tbsp butter
- 2–3 garlic cloves (minced)
- 2 tbsp all-purpose flour
- 1 cup chicken stock
- 3 tbsp fresh lemon juice
- 1 ½ tsp lemon zest
- 3 tbsp chopped fresh basil
- Salt and black pepper to taste
Instructions
- Prepare the chicken: Flatten the chicken breasts using a mallet and season both sides with salt and black pepper.
- Sear the chicken: In a skillet over medium heat, melt 1 tablespoon of butter and cook the chicken for about 4-5 minutes on each side until browned.
- Make the sauce: Add the remaining tablespoon of butter to the skillet, then add minced garlic and cook for about 30 seconds until fragrant.
- Combine ingredients for sauce: Whisk in the flour, then gradually pour in the chicken stock and lemon juice while stirring constantly.
- Finish cooking the chicken: Return the chicken to the skillet and simmer for a few minutes until the sauce thickens.
- Garnish and serve: Sprinkle with chopped fresh basil and adjust seasoning with salt and black pepper as needed.
