Description

A quick and savory Korean ground beef bowl with fresh vegetables and a sweet soy sauce glaze, perfect for busy weeknights.


Ingredients

  • 1 lb lean ground beef
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 4 green onions, sliced (plus extra for garnish)
  • 2 cups cooked rice (white or brown)
  • 1 cup bell peppers, diced
  • 1 cup carrots, sliced

Instructions

  1. Prepare your ingredients by chopping the garlic, ginger, and green onions and cooking your rice.
  2. In a large skillet, heat a splash of oil over medium heat.
  3. Add the minced garlic and grated ginger to the skillet and sauté for 30 seconds until fragrant.
  4. Increase the heat to medium-high and add the ground beef, cooking until browned, about 5 minutes.
  5. Stir in the low-sodium soy sauce and brown sugar, allowing it to simmer for 3 minutes.
  6. Add the diced bell peppers and sliced carrots to the skillet and sauté for 3-4 minutes until tender yet crisp.
  7. Serve the meat and vegetable mixture over warm rice and top with sliced green onions.

Notes

For added flavor, serve with kimchi or a light Asian salad on the side.
