- 1 head of cauliflower, grated into rice-sized pieces
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup vegetable or chicken broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for an additional minute.
- Stir in the cauliflower rice and cook for about 5 minutes.
- Gradually add the broth, allowing the cauliflower to absorb the liquid. Stir occasionally.
- Once the cauliflower is tender, stir in the Parmesan cheese. Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.

For best results, ensure even grating of the cauliflower and monitor the cooking time to avoid mushiness.
