Description

Delicious and crunchy Keto Crackers made with almond flour and cheese, perfect for a low-carb snack.

Ingredients

Scale
  • 1.5 cups super-fine blanched almond flour
  • 1 cup shredded low-moisture mozzarella cheese
  • 0.5 cup grated parmesan cheese
  • 1 large egg (beaten)
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. Combine the shredded mozzarella and grated parmesan in a medium, microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until fully melted and well combined.
  3. Add the almond flour, beaten egg, garlic powder, onion powder, and sea salt to the melted cheese. Mix with a spatula until a cohesive dough ball forms.
  4. Place the dough between two sheets of parchment paper. Roll it out as thinly as possible, aiming for about 1/16-inch thickness for the crispiest crackers.
  5. Remove the top sheet of parchment paper. Use a pizza cutter or knife to cut the dough into 1.5-inch squares.
  6. Slide the parchment with the dough onto your prepared baking sheet. Bake for 12-15 minutes, rotating halfway through, until the edges are golden brown and the crackers feel firm.
  7. Let the crackers cool completely on the baking sheet. They will crisp up significantly as they cool. Once cool, break them apart and serve.

Notes

Store in an airtight container at room temperature for up to a week or freeze for longer storage.
